Hilsa polao

Bengali in fish rice - if that fish is hilsa on it, then there is no point. And there is no comparison to the polao made with this hilsa. Today, a simple recipe of Hilsa Polao has been brought to the attention of Bengalis.


Ingredients:

5 pieces of hilsa fish, 1 cup of sour curd, 1 cup of onion barista, 1 teaspoon of raw chilli paste, 1 teaspoon of ginger paste, 1 teaspoon of garlic paste, 1.5 teaspoon of cumin powder, 1 teaspoon of sugar, salt according to taste.

Ingredients for cooking polao

3 tablespoons of oil, 2 tablespoons of ghee, 2 cups of rice, 1 tablespoon of onion paste, 1 and a half cup of onion paste, 2 pieces of cinnamon, 4 cloves, 4 cardamoms, 10 black pepper, 2 bay leaves, salt to taste, hot water 4 Cup, 5 raw chillies.

Method:


  • First you have to wash the fish well. Then in a large bowl mix yogurt, ginger paste, garlic paste, chilli paste, cumin powder, barista, sugar and salt.
  • In this way, leave the fish smeared with all these spices for about 10 minutes.
  • Then lightly fry the fish in oil for five minutes on low heat.
  • Now for cooking polao, first wash the rice and soak it in water for about 30 minutes. Then remove the rice from the water and place in a container.
  • Then heat oil in a pan and grate the onion. Then fry all the hot spices one by one for a while.
  • Now pour the rice in the pan very carefully. Stir lightly and add onion paste and ginger paste.
  • Stir the rice lightly for five minutes so that the spicy taste comes to the polao. In this case, when you see the rice is getting a little heavy, then you will understand that the rice is fried.
  • Now stir well with hot water in a pan. When the water boils lightly, reduce the flame and cover with a lid. When the rice is half cooked, fry the fish on it and cook with raw chilli on low heat for another fifteen minutes.

At this time, the cooking pan must be covered with a lid. Then turn off the gas and spread a little barista on top and serve hot with your hilsa polao.
